The river shapes Harbin more than any spring could. The Songhua, a tributary of the Amur, flows past the city and freezes so thick in winter that workers saw blocks out of it. Starting in early December, tens of thousands of blocks are broken out of the ice and loaded onto trucks, before the buildings of the Ice and Snow World rise from them in January.

The climate is the real distinguishing feature of the northeast. Winters are long and harsh, summers short and warm. For a bottom-fermented beer that ferments cool and is stored cold, this is an advantage: long before refrigeration machines existed, beer in the north could easily be kept cool, and today the cold outside saves energy on cooling.

There are no reliable figures on the brewing water itself that could be cleanly cited here. This is not unusual, since almost every major brewery worldwide treats its water, softening it, filtering it, and adjusting it to a consistent profile. "The water makes the style" is therefore more history than present-day reality.

For the taste of a pale lager, soft, mineral-poor water is enough, as it lets malt and hops speak without interference. A dark, heavy beer would need more dissolved carbonates. The pale Harbin beer falls into the first group, and its clean, light character follows this logic.

The result can be seen in the glass: no mineral accent, no sulfur, but a clear, smooth beer that tastes better cold than warm. That's no coincidence, it's craft.

Ice and river play a second role too. They make the city a place where cold is part of the culture, and a cool beer its natural companion.
