The Brabants worstenbroodje is the best-known Brabant specialty to pair with beer: a roughly six-inch sausage of ground meat baked into soft yeast dough. Unlike the Dutch saucijzenbroodje or the Belgian worstenbrood, it's not made with puff pastry but with bread dough.

It's traditionally eaten at Christmas, especially after midnight mass, and during carnival. Mildly seasoned meat, a touch of fat, and soft bread pair well with a Dubbel, whose caramel notes soak up the spice, or with a pilsner, which rinses the palate clean again.

Den Bosch is known for the Bossche bol, a giant cream puff filled with whipped cream and coated in chocolate. A Quadrupel, dark and full-bodied, makes a fitting counterpart to the sweetness, sipped slowly in small amounts.

Carnival in Brabant is a festival of place names. Den Bosch becomes Oeteldonk, Breda becomes Kielegat, Tilburg becomes Kruikenstad, and Eindhoven becomes Lampegat. The festival belongs to the Catholic south, held before Lent, and the streets fill with costumes, parades, and brass bands. Beer is part of it, but not the main attraction. What matters more is community, music, and the costumes people will talk about for days.

At the pub—the Dutch kroeg—you order a small pilsner, known colloquially as a vaasje if the glass is squat, or a fluitje if it's slender. The strong abbey beers, by contrast, come in a chalice, and many guests order just one. Bavaria and Dommelsch, meanwhile, supply the pilsner that serves as the standard beer in nearly every pub in the region.
