Preparation
- Preheat the oven to 150 °C (conventional). Rinse the oxtail pieces, pat them very dry and dust lightly with flour.
- Heat the clarified butter in a large casserole and brown the meat on all sides in batches; do not crowd the pot, or the meat will stew in its own juices. Only then season with salt and pepper.
- Brown the soup vegetables, shallots and garlic as well, seasoning with the sugar and a little salt. Briefly roast the tomato purée with them.
- Return the meat to the pot and add the thyme, rosemary, red wine, Madeira and water. Cover and braise in the oven for 2½ to 3 hours, until the meat comes easily off the bone; top up the liquid if needed.
- Take out the meat, let it cool briefly and remove it from the bones and cartilage. Strain the braising liquid through a sieve, discard the vegetables, return the meat to the sauce, adjust the seasoning and reduce a little more.
- Stir in the mushrooms and celery and steam, covered, for 10 minutes. Thicken the sauce lightly with the cornflour mixture.
- For the rösti, coarsely grate the potatoes and mix with salt, pepper, nutmeg, flour and egg. Heat the clarified butter, spoon the mixture into the pan by the tablespoon, flatten and fry until golden brown on both sides.
- Serve the ragout with the rösti on warmed plates.
