Hops

Hardly any hops are grown in the Ardennes or the Meuse valley, and no figures exist on this. Belgium's well-known hop-growing region lies around Poperinge in West Flanders, far from Namur. Brewers in this region therefore buy in their hops, with varieties sourced from Germany and England.

Rochefort is known to use Hallertau and Golding hops. Hallertau hops have carried the EU's PGI seal since 2010, designating hops grown in Bavaria's Hallertau region. Golding, an English variety, is prized for mild, slightly earthy, and floral aromas. Neither variety delivers forceful bitterness; both defer to the malt's sweetness.

Still, the beer isn't flat. According to style guidelines, a Belgian Blond Ale sits at 15 to 30 IBU, a Tripel at 20 to 40, and a Dark Strong Ale at 20 to 35. IBU is the measurement for bitterness units. This is moderate, and with malt sweetness added to the mix, bitterness remains in the background.

Achouffe is an exception. Houblon Chouffe is a boldly hopped beer that the brewery itself describes as the first Belgian IPA. It shows that an Ardennes beer can lean into hop aroma even without a monastic pedigree. Hops contribute two things at once: bitter compounds that dissolve into the wort during a long boil, and aromatic oils that remain in the beer mainly when added late in the process. The classic monastery beers tend to use bitterness as a counterbalance, while the hoppy beer from Achouffe plays with aroma instead. Taste both side by side, and you'll understand the difference in a single sip.
