Preparation
- Whisk the flour, eggs, sugar, salt and milk into a thick batter; it should run slowly off the spoon.
- Peel the apples, cut out the cores and slice the apples crosswise into rings about 1 cm thick.
- Heat the oil in a frying pan. Pull the apple rings one at a time through the batter, let them drip briefly and fry in batches over medium heat until golden brown on both sides.
- Drain the finished fritters on kitchen paper, roll them in cinnamon sugar while still warm and serve with a dollop of crème fraîche.

Fruit brandy · excellent match
Apple brandy or Calvados, neat at room temperature
The apple brandy echoes the baked apple, its alcohol cuts the frying fat, and the cinnamon note meets the cask ageing of a Calvados.

Riesling Spätlese or Auslese
The apple-like fruit and lively acidity of Riesling mirror the tart Boskoop rings and carry the cinnamon sugar.

Off-dry Sekt or Crémant demi-sec
