Preparation

  1. Preheat the oven to 200 °C. Line a pie dish of about 23 cm with one sheet of pastry.
  2. Mix the rhubarb and strawberries and fill the dish.
  3. Whisk the eggs, sugar, flour, salt and nutmeg until well combined and pour evenly over the fruit. Dot with the butter.
  4. Cut the second sheet of pastry into strips and lay them over the filling as a lattice; press the edge down firmly.
  5. Bake the pie for about 40 minutes until the filling is bubbling and the pastry is golden brown. If the edge gets too dark, cover it with foil.
  6. Let it cool slightly and serve lukewarm with vanilla ice cream or whipped cream.

Drink with it

  • Sweet wine · excellent match

    Riesling Spätlese or Auslese

The high acidity of the Riesling keeps up with the tart rhubarb; its sweetness is at least as high as that of the filling, otherwise the wine tastes thin.

  • Sparkling wine · excellent match

Moscato d'Asti or Brachetto d'Acqui, well chilled

Low alcohol, residual sugar and fine bubbles suit the warm fruit; the Brachetto even brings strawberry notes of its own.

  • Fruit liqueur · excellent match

Strawberry or raspberry liqueur, chilled in a small glass

The liqueur extends the berry fruit, and its sweetness tempers the rhubarb acidity.
