Solyanka (Soljanka)
A robust, sour-salty soup with three kinds of sausage, peppers, gherkins and capers, served with a dollop of soured cream and lemon.
As of:
Preparation
Prepare all the ingredients: dice the sausage and bacon, chop the onions, cut the peppers into strips and the gherkins into slices.
Render and brown the bacon in a large pot over medium heat. Add the Jagdwurst and poultry sausage and brown well, then fry the salami briefly with them.
Add the onions and fry until translucent. If anything sticks, add a splash of water.
Add the peppers, tomato purée and crushed garlic and fry briefly.
Stir in the gherkins, gherkin brine, capers, bay leaf, mustard, paprika and sambal oelek. Pour in the stock and simmer gently for about 20 minutes.
Season with salt and pepper. Best left to infuse for several hours or overnight and then simply reheated.
Serve hot with soured cream and a slice of lemon, with toasted bread on the side.
Drink with it
Vodka · excellent match
Clear vodka, neat and ice cold
Ice cold and neutral, it clears sausage fat and salt from the palate and stands beside the acidity of gherkin and lemon; in Russia it is drunk with soups like this.
