Preparation

  1. For the dressing, blend all the ingredients except the coriander with a hand blender to a smooth mixture. Then add the coriander and blend briefly again until finely chopped. Chill the dressing until serving.
  2. Mix the cabbage, carrots, pepper, cucumber, edamame and spring onions in a large bowl.
  3. Fold the dressing into the salad only just before serving so the vegetables stay crunchy.
  4. Sprinkle the plated salad with coriander and chopped peanuts.

Drink with it

  • White wine · excellent match

    Riesling Kabinett, feinherb

The residual sweetness meets the honey and sugar in the dressing, and the acidity matches the lime and rice vinegar.

  • Pale lager · good match

    Helles or Pils, ice cold

Carbonation and a fine bitterness cut through the oily, creamy peanut dressing and keep the salad light.

  • Ginjo sake · good match

    Ginjo, well chilled (8 to 10 °C)

The cool, fruity ginjo without tannins suits the lime and ginger and leaves the peanut dressing in the foreground.
