Gose and Its Relatives

Beer Styles

What is Gose? Leipziger Gose is a top-fermented, mixed-fermentation wheat beer made with lactic acid, salt, and coriander. It tastes tart, lightly salty, and fresh, with alcohol staying moderate at 4.2 to 4.8 percent. The color ranges from straw-yellow to gold, often with a slight haze. Order it in Leipzig and you'll find it at the Gosenschenke Ohne Bedenken just as readily as at any Gosebrauerei in the city.

How does Gose differ from Berliner Weisse? Both are sour, both are high in wheat, both are low in alcohol. Gose additionally brings salt and coriander, making it spicier, while Berliner Weisse, at 2.8 to 3.8 percent alcohol, drinks leaner and purely sour, often served with syrup.

And compared to Hefeweizen? Bavarian wheat beer ferments solely with yeast, which gives it its banana and clove notes. Gose doesn't foreground those yeast aromas—instead it leads with lemon, salt, and a touch of bread.

Gose isn't some competition oddity—it holds its own place in the beer judges' rulebook. The ranges in the profile come from the BJCP guidelines, an American catalog for competitions, and represent corridors, not recipe requirements. Individual beers often fall above or below them, especially fruited variants.

Modern brewers love to reinvent Gose, with raspberry, passion fruit, or cucumber. That has little to do with the original Leipziger Gose. Anyone wanting to taste the origin should reach for the classic version, where acidity, salt, and coriander form a calm, unified line.
