Preparation
- Cook the egg in boiling water for 1 minute 30 seconds, then immediately cool under cold water.
- Fry the bread cubes in the oil with the crushed garlic clove for about 3 minutes until golden brown all over, drain on kitchen paper and remove the garlic clove.
- Wash the romaine lettuce, spin it thoroughly dry, tear or cut into bite-sized pieces and put in a large bowl.
- For the dressing, crack the egg into a tall jug, add the anchovies, garlic, mustard, capers, lemon juice and pepper and blend. With the blender running, pour in the oil in a thin stream until you have a creamy dressing. Taste and add salt only sparingly.
- Toss the salad with the dressing, scatter over the croûtons and Parmesan and serve immediately.

White wine · excellent match
Chablis or another unoaked Chardonnay, alternatively Sauvignon Blanc
Cool acidity and citrus fruit pick up the lemon in the dressing, and the lean body supports the egg and Parmesan without clashing with the saltiness of the anchovies.
