Preparation

  1. Cook the spaghetti in plenty of salted water until al dente according to the packet instructions, drain, rinse under cold water and drain well.
  2. Blend the peanut butter, soy sauce, sesame oil, rice vinegar, water, sugar, garlic, ginger and chilli in a blender until smooth; alternatively, grate the garlic and ginger very finely and whisk everything together.
  3. Mix the noodles, carrot, red cabbage, pepper, edamame, spring onions and coriander in a large bowl, pour over the sauce and toss thoroughly with tongs until every strand is coated.
  4. Divide among bowls, sprinkle with peanuts and sesame seeds and serve at room temperature or chilled.

Drink with it

  • White wine · excellent match

    Riesling Kabinett, feinherb (off-dry)

Residual sugar and tight acidity keep the rich peanut sauce light and take the edge off ginger, chilli and rice vinegar.

  • Wheat beer · good match

    Hefeweizen, well chilled

Soft carbonation and fruity yeast notes carry the rich peanut sauce without adding bitterness against soy sauce and sesame.

  • Pale lager · good match

    Helles or light lager, cold

Sparkling carbonation and mild malt clear the creamy sauce from the palate, and the low hops do not clash with the soy sauce.

  • Junmai sake · good match

    Junmai, chilled

The rice-driven umami fullness of the junmai suits soy sauce and sesame oil, and its soft acidity lifts the richness of the nut cream.
