Preparation

  1. Peel and finely chop the onion; wash, trim and dice the peppers, courgettes and tomatoes.
  2. Heat half of the oil in a large frying pan, fry all the vegetables well and season with salt and pepper.
  3. Whisk the eggs and season with salt and pepper. Take half of the vegetables out of the pan and set aside.
  4. Pour half of the egg mixture over the vegetables in the pan and let it set over a low heat under a lid for about 10 minutes. Then turn it over and cook for a few more minutes.
  5. Fold the omelette over and serve straight away. Make a second omelette with the remaining oil, vegetables and egg mixture.

Drink with it

  • Sparkling wine · excellent match

    Crémant or Sekt, brut

Acidity and bubbles keep the egg light and wash the frying oil from the palate; sparkling wine with egg dishes is the brunch classic.

  • Rosé · good match

    Dry rosé, fruity

Fresh red fruit and acidity accompany the peppers and tomato without overwhelming the soft egg.

  • White wine · good match

Grüner Veltliner or Sauvignon Blanc, young

Herbaceous green notes suit the courgette and peppers, and the acidity enlivens the egg.

  • Wheat beer · good match

    Hefeweizen

The gentle carbonation and fruity note of the wheat beer suit the sweetness of the peppers and tomato.
