Preparation
- Cook the potatoes in their skins in salted water until a knife slides in easily, then rinse briefly in cold water, peel while still warm and cut into slices about 5 mm thick.
- Sweat the onions in the oil until translucent, add the sugar, pour in the stock and bring briefly to the boil.
- Pour the hot stock over the potato slices, add the vinegar and mustard and mix gently so the slices stay whole.
- Leave the salad to infuse for at least 1 hour so the potatoes absorb the dressing.
- Stir in the soured cream, season with salt and pepper and sprinkle with parsley before serving.
Drink with it
Pale lager · excellent match
Helles or Pils, well chilled
Carbonation and mild hop bitterness loosen the starch, and the malt stays in the background next to the vinegar and soured cream.
Pils or Helles: What's the Difference?White wine · good match
Grüner Veltliner, dry
Acidity and pepperiness keep pace with the vinegar and onion; the soured cream takes the edge off the dressing so the wine does not seem harsh.
