Preparation

  1. Preheat the oven to 200 °C conventional. Mix the meat thoroughly with the rosemary, marjoram, thyme, caraway, both kinds of paprika and salt.
  2. Heat the oil in a roasting tin on the hob. Fry the bacon, onions, garlic and tomato purée in it.
  3. Add the seasoned meat and sear vigorously, stirring. Deglaze with the red wine and game stock, add the juniper berries and bay leaves, bring to the boil and stir everything well.
  4. Braise covered on the middle shelf of the oven for 45 minutes, then stir in the cranberries and braise covered for another 45 minutes until the meat is tender.
  5. Take the tin out, put it on the hob, stir in the schmand, season with salt and pepper and bring to the boil once more. Remove the bay leaves.
  6. Bread dumplings, potatoes or spätzle and red cabbage or lamb's lettuce go well with it.

Drink with it

  • Red wine · excellent match

Spicy Blaufränkisch, Syrah or robust Spätburgunder (Pinot Noir)

Tannin and dark fruit stand up to fat and roasted flavours and go together with juniper and thyme.

  • Dark beer · excellent match

    Dark bock beer or Doppelbock

Roasted malt and malt sweetness pick up the braising sauce, and the carbonation cuts through bacon and schmand.

Which beer goes with food? More than just pils with barbecue ↗
  • Sherry-cask whisky · excellent match

Speyside sherry-cask malt, neat with a splash of water, in small sips with the meal

Game and sherry cask are a Scottish classic: dried fruit and oak spice from the malt pick up roasted flavours and juniper, and the cranberries mirror the red fruit in the glass.

  • London dry gin · good match

London dry gin as a gin and tonic, lots of ice

The juniper note in the gin links up with the juniper berries in the goulash, and tonic and ice freshen the heavy flavours.

Why it pairs well

Gin and tonic is the cheeky choice: the juniper in the gin meets the juniper berries in the pot, and ice and tonic make the heavy dish lighter.
