Preparation
- Chill the serving glass. Add all the ingredients, including the pasteurised egg white, to the shaker.
- Shake especially hard with plenty of ice so the ingredients combine and air gets worked in.
- Strain into the chilled glass through a strainer, leaving the shaking ice behind.
- Finish by garnishing with fresh raspberries.
What does it taste like?
Raspberry comes first. The syrup makes the drink fruity and sweet, yet there's only 15 millilitres of it. An equal amount of lemon juice pushes right back with clear acidity. Between the two, the gin still comes through clearly, its juniper carrying the whole cocktail. You won't actually taste the egg white — it just makes the liquid a bit denser and lays a thin layer of foam on top. With 45 millilitres of gin and only 30 millilitres of everything else, the Clover Club is stronger than its colour suggests.
