Preparation
- Stir the rum, lime juice, and cane syrup together in the glass.
- Add water or ice gradually until you reach the desired dilution.
- Combine gently once more and finish with the zest.
- Finish with a garnish: orange zest.
What does it taste like?
Jamaican rum tastes bold and fruity, often with notes of overripe banana or pineapple. That character takes center stage here, since nothing covers it up. Lime provides the acidity—15 milliliters is enough for a clear, fresh edge. Cane syrup is milder than simple syrup and tastes grassy-sweet, rounding out the rum without oversweetening it. How strong the drink ends up is entirely up to you. With little water it stays concentrated and warming. More ice makes it longer, cooler, and easier to drink.
