Entalkoholisierte Getränke, Alternativen und gute Begleiter zum Essen.
Alkoholfrei ist in wenigen Jahren von der Verlegenheitslösung zur eigenen Kategorie geworden — mit eigenen Verfahren, eigenen Schwächen und eigenem Preisniveau.
Technisch geht es um den Entzug. Vakuumdestillation arbeitet bei rund 30 Grad und schont die Aromen; Umkehrosmose trennt über eine Membran. Beide Wege verlieren etwas, und der Verlust wird häufig mit Süsse ausgeglichen. Das ist der Grund, warum viele entalkoholisierte Weine süsser wirken als ihre Vorlage.
Daneben stehen die Getränke, die nie Alkohol enthielten: Verjus, Kombucha, alkoholfreie Aperitifs, gute Säfte. Zum Essen funktionieren sie oft besser, weil sie nichts nachahmen müssen. Beide Wege kommen hier vor.
